Thanksgiving Sides 


Green Beans

Ingredients: 

1 clove of Harlem Grown, Garlic 

½ bunch of Harlem Grown, Chives 

2 bunches of Harlem Grown, Green Beans 

1 cup of extra virgin olive oil 

1 Tablespoon, Salt 

2 Tablespoon, Mrs. Dash (yellow top)  

Extra virgin olive oil, drizzle 

 

Instructions: 

1. Grab a blender and blend all ingredients, except green beans.  

2. Grab a skillet, over medium heat, pour ¾ of the mixture in the pan, add green beans and toss together, cook until flavors have combined, add to a serving plate  


Sweet Potatoes / Yams 

Ingredients: 

6-8 Sweet potatoes, peeled, cut diced small 

2-3 springs of Harlem Grown, Thyme, peeled 

2-3 springs of Harlem Grown, Rosemary, peeled 

2 Tablespoons of Mrs. Dash (yellow top) 

1 teaspoon of Mrs. Dash (purple top)  

1 teaspoon of Mrs. Dash (green top) 

1 teaspoon of Mrs. Dash (blue top) 

1 Tablespoon of Onion powder 

1 Tablespoon of Garlic powder 

2 Tablespoon of extra virgin olive oil 

Black pepper to taste 

Salt to taste 

 

Substitution for Mrs. Dash flavors: blend of dry ingredients (thyme, parsley, garlic powder, onion powder, black pepper, rosemary) or 1 packet of Goya vegetable seasonings 

 

Instructions: 

1. Grab a medium pot filled with water, bring to a boil, add sweet potatoes, cook until potatoes are tender. 

2. Pour water out, take a masher or fork and start mashing, add all ingredients, get a whisk or spatula and whip, salt to taste, add to a serving bowl. 


Honey Butter

Ingredients: 

1 6oz. Harlem Grown, Honey 

½ stick of butter or vegan butter, room temperature  

 

Instructions: 

Grab a big bowl, add butter, take a fork and start smoothing the butter, slowly start adding the honey until smooth and honey is mixed in. Grab bowl and set to the side. Makes a pint container 


Sauteed Collard Greens

Ingredients: 

4-5 bunches of Harlem Grown, Collard Greens, washed, rough chop, thin 

1 small onion diced 

2 Tablespoons of black pepper 

1 Tablespoon of Mrs. Dash (green top) 

¼ of Harlem Grown garlic  

Salt to taste 

 

Substitution for Mrs. Dash flavors: blend of dry ingredients (thyme, parsley, garlic powder, onion powder, black pepper, rosemary) or 1 packet of Goya vegetable seasonings 

 

Instructions: 

Grab a skillet, over low heat, add garlic mix and onions, cook until onions are clear, add greens slowly, greens have cooked down, toss together lightly.  


Savory Harlem Grown Stuffing 

Ingredients: 

1/3 cup of extra virgin olive oil 

½ stick of butter or 8oz. container of Earth Balance (soy free) 

2 sticks of celery, chopped 

1 small onion, diced 

4-5 gloves of Harlem Grown fresh garlic, finely chopped 

1 bunch of Harlem Grown fresh thyme, leaves stripped from stems 

1 loaf of stale of country white, small diced or Pepperidge Farm stuffing cubes 

1 loaf of stale of pumpernickel, small diced or Pepperidge Farm stuffing cubes 

1½ cup of vegetable stock 

1 bag of shaved Brussel sprouts 

1 tablespoon of Mrs. Dash 

Salt to taste 

Black pepper to taste 

 

Substitution for Mrs. Dash flavors: blend of dry ingredients (thyme, parsley, garlic powder, onion powder, black pepper, rosemary) or 1 packet of Goya vegetable seasonings 

 

Instructions: 

1.Grab a large skillet, on low heat melt butter, once melted add garlic, onions. 

2. Stir frequently and cook until onions are clear. Then add celery, shaved brussels, add fresh thyme, add seasoning, mix well.  

3. Add a mixture of breadcrumbs and fold in all breadcrumbs. Try to absorb all of the butter and veggies throughout, raise the temp to a medium heat, browning the bread slightly.  

4. Add stock, mix well, allow the stock to be absorbed.  

5. Serve from skillet or if you prefer the baked style, add to a lightly greased baking pan and bake on @350 degrees for 15 min. to brown the top.
